- 1 sheet puff pastry (thawed)
- 150β200 g Brie cheese (cut into small cubes)
- 1β2 ripe peaches (thinly sliced or small wedges)
- 1 egg (for egg wash)
- 1β2 tbsp honey
- 1 tbsp butter (optional, for brushing)
- Pinch of salt (optional)
- Fresh thyme or rosemary (optional but highly recommended)

1. Prep pastry
- Preheat oven to 200Β°C
- Cut puff pastry into small squares (about 2β3 inches each)
- Place squares into a greased muffin tray or on a baking sheet
2. Assemble bites
In each pastry square:
- Add a small cube of brie
- Top with a slice of peach
- Add a tiny drizzle of honey
- Optional: sprinkle a pinch of salt or herbs
3. Egg wash
- Beat egg and brush edges of pastry
- This gives a golden, glossy finish
4. Bake
- Bake for 12β18 minutes
- Until pastry is puffed and golden, and cheese is melted
5. Finish
- Drizzle a little extra honey while warm
- Add fresh thyme or rosemary if using
