Here’s a simple, classic peanut butter cookie recipe—soft in the center, slightly crisp on the edges.

Ingredients

  • 1 cup (250 g) peanut butter
  • 1 cup (200 g) sugar
  • 1 large egg
  • 1 tsp vanilla extract (optional)
  • A pinch of salt (if peanut butter is unsalted)

Instructions

  1. Preheat oven to 175°C (350°F). Line a baking tray with parchment paper.
  2. In a bowl, mix peanut butter, sugar, egg, vanilla, and salt until smooth.
  3. Roll dough into small balls (about 1 tablespoon each).
  4. Place on the tray and gently flatten with a fork in a crisscross pattern.
  5. Bake for 8–10 minutes until edges are lightly golden.
  6. Let them cool on the tray for 5 minutes (they firm up as they cool).

Tips

  • For softer cookies, slightly underbake them.
  • For extra flavor, add chocolate chips or drizzle melted chocolate on top.
  • Crunchy peanut butter gives a more textured cookie.
