🍍 Pineapple Pound Cake Recipe

🧾 Ingredients

For the cake:

  • 1 cup (225g) butter, softened
  • 2 cups sugar
  • 4 eggs
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup crushed pineapple (well drained)
  • 1 tsp vanilla extract
  • ½ cup milk (or pineapple juice for extra flavor)

Optional glaze:

  • 1 cup powdered sugar
  • 2–3 tbsp pineapple juice

1. Prepare the oven

Preheat to 175°C (350°F). Grease and flour a loaf pan or bundt pan.


2. Cream butter and sugar

Beat butter and sugar together until light and fluffy (3–5 minutes). This step gives the cake its soft texture.


3. Add eggs

Add eggs one at a time, mixing well after each.


4. Mix dry ingredients

In a separate bowl, combine:

  • flour
  • baking powder
  • salt

5. Combine everything

Add dry ingredients to the butter mixture in batches, alternating with milk (or pineapple juice).
Mix until just combined—don’t overmix.


6. Add pineapple & vanilla

Fold in:

  • crushed pineapple
  • vanilla extract

7. Bake

Pour batter into pan and bake for:

  • 60–75 minutes (depends on oven)

Check with a toothpick—if it comes out clean, it’s ready.


8. Cool & glaze (optional)

Let it cool 15–20 minutes, then remove from pan.
Mix glaze and drizzle on top.


🍰 Tips for best results

  • Drain pineapple very well to avoid soggy cake
  • Room-temperature butter = better texture
  • Do not overmix after adding flour
  • It tastes even better the next day
