Ingredients

  • 500g (1 lb) ground beef (or chicken)
  • 1 small onion, chopped
  • 1 packet taco seasoning (or homemade mix)
  • 1/3 cup water
  • 1 can (400g) black beans or kidney beans (optional), drained
  • 1 cup corn (optional)
  • 1 cup salsa (or diced tomatoes with green chilies)
  • 2–3 cups crushed tortilla chips or nacho cheese chips (like Doritos-style)
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream (for serving)

Toppings (optional but recommended)

  • Lettuce, shredded
  • Tomatoes, diced
  • Jalapeños
  • Green onions
  • Hot sauce
  • Guacamole

🔥 Instructions

  1. Cook the meat
    • In a skillet, cook ground beef and onion until browned.
    • Drain excess fat.
  2. Season it
    • Add taco seasoning and water.
    • Stir and simmer for 3–5 minutes.
  3. Add mix-ins
    • Stir in beans, corn, and salsa.
    • Let it cook together for 2–3 minutes.
  4. Layer the casserole
    • In a baking dish, add a layer of crushed chips.
    • Spoon meat mixture over chips.
    • Sprinkle a generous layer of cheese.
  5. Bake
    • Bake at 180°C (350°F) for 10–15 minutes until cheese melts.
  6. Serve
    • Top with lettuce, tomatoes, sour cream, and any extras you like.

💡 Tips

  • Add chips just before baking so they stay slightly crunchy.
  • You can swap beef for shredded chicken or even plant-based mince.
  • For extra flavor, use spicy nacho chips instead of plain tortilla chips.
