🥒 Zucchini Garlic Bites (Crispy & Flavorful)

Ingredients

  • 2 medium Zucchini (grated)
  • 2–3 cloves Garlic (minced)
  • 1 egg
  • 1/2 cup all-purpose flour (or breadcrumbs for extra crunch)
  • 1/3 cup grated cheese (Parmesan or cheddar)
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp chili flakes (optional)
  • 2–3 tbsp chopped parsley or coriander
  • Oil for frying (or use air fryer)

Instructions

1. Prep the zucchini

  • Grate the zucchini.
  • Sprinkle a pinch of salt and let it sit for 10 minutes.
  • Squeeze out as much water as possible (this is key for crispiness).

2. Mix the batter

  • In a bowl, combine squeezed zucchini, garlic, egg, flour, cheese, spices, and herbs.
  • Mix until it forms a thick, scoopable mixture.

3. Shape the bites

  • Take small spoonfuls and shape into patties or bite-sized balls.

4. Cook

Pan-fry method:

  • Heat oil on medium heat.
  • Fry until golden brown on both sides (about 2–3 minutes per side).

Air fryer method:

  • Lightly brush with oil.
  • Air fry at 180°C for 10–12 minutes, flipping halfway.

Serving ideas

  • Garlic yogurt dip
  • Spicy mayo
  • Mint chutney
  • Ketchup (simple but works)

Tips for best results

  • Removing zucchini water is essential or they’ll turn soggy.
  • Add extra cheese if you want a richer flavor.
  • Don’t overcrowd the pan when frying.
