🍋🍪 Lemon crumb bars

Lemon crumb bars are bright, buttery dessert squares with a tangy lemon filling sandwiched between a soft crust and a crunchy crumb topping. They’re sweet, tart, and very easy to slice and serve.


🧾 Ingredients

🧈 Crust & crumb

  • 2 cups all-purpose flour
  • 1 cup sugar
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¾ cup butter (cold, cubed)
  • 1 egg

🍋 Lemon filling

  • 2–3 eggs
  • ¾ cup sugar
  • ⅓ cup lemon juice (fresh is best)
  • 1 tbsp lemon zest (optional but recommended)
  • 2 tbsp flour or cornstarch (to thicken)

👩‍🍳 Method

1. Make crumb base

  • Mix flour, sugar, baking powder, and salt.
  • Cut in butter until crumbly.
  • Mix in egg to form a soft dough.

2. Form crust

  • Press about ⅔ of the mixture into a lined baking pan.
  • Reserve the remaining ⅓ for topping.

3. Make lemon filling

  • Whisk eggs, sugar, lemon juice, zest, and flour until smooth.

4. Assemble

  • Pour lemon mixture over crust.
  • Sprinkle remaining crumb mixture on top.

5. Bake

  • Bake at 180°C (350°F) for 30–35 minutes
  • Top should be lightly golden and filling set

6. Cool & slice

  • Let cool completely before cutting (important for clean bars).
  • Chill for firmer texture if desired.

🍽️ Serving ideas

  • Dust with powdered sugar
  • Serve with tea or coffee
  • Add berries on the side for freshness
