🌶️🍲 Slow Cooker Chili (Set-It-and-Forget-It Comfort Food)

Slow cooker chili is a rich, hearty beef-and-bean stew that cooks low and slow until the flavors deepen and the meat becomes tender. It’s perfect for meal prep, gatherings, or cozy dinners.


🧾 Ingredients (6–8 servings)

Meat & base

  • 500–700g ground beef (or beef chunks for chunkier chili)
  • 1 large onion, chopped
  • 3–4 cloves garlic, minced
  • 1 bell pepper, chopped (optional but recommended)

Beans & tomatoes

  • 1 can kidney beans (drained)
  • 1 can black beans (optional)
  • 1 can crushed tomatoes
  • 2 tbsp tomato paste
  • 1 cup beef broth (or water + bouillon)

Seasoning

  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • Optional: ½ tsp cayenne or chili flakes for heat
  • Optional: 1 tsp cocoa powder (adds depth, not sweetness)

👨‍🍳 Instructions

1. Brown the meat (important for flavor)

  • In a pan, cook ground beef until browned.
  • Drain excess fat if needed.

2. Add everything to slow cooker

  • Transfer beef to slow cooker.
  • Add onion, garlic, bell pepper, beans, tomatoes, tomato paste, broth, and all spices.
  • Stir well to combine.

3. Slow cook

  • Cook 6–8 hours

⚡ High setting

  • Cook 3–4 hours

Stir once or twice if possible, but not required.


4. Finish & adjust

  • Taste and adjust salt, spice, or thickness.
  • If too thin, cook uncovered for 20–30 minutes to thicken.

💡 Tips for best slow cooker chili

  • Chili tastes better the next day—great for leftovers.
