Fettuccine Alfredo

Fettuccine Alfredo is a rich, creamy Italian pasta dish made with fettuccine noodles tossed in a buttery Parmesan cheese sauce. It’s simple but very filling.

Classic Fettuccine Alfredo Recipe

Ingredients (2 servings):

  • 200 g fettuccine pasta
  • 3 tbsp butter
  • 1 cup heavy cream (or cooking cream)
  • 1 cup freshly grated Parmesan cheese
  • 2 cloves garlic (optional, minced)
  • Salt and black pepper to taste
  • Optional: chicken, mushrooms, or broccoli

Instructions:

  1. Cook pasta in salted boiling water until al dente. Save ½ cup of pasta water before draining.
  2. Make sauce: In a pan, melt butter over medium heat. Add garlic (if using) and sauté for 30 seconds.
  3. Add cream and simmer gently for 2–3 minutes.
  4. Lower the heat and stir in Parmesan cheese until smooth and creamy.
  5. Add cooked pasta and toss well. If too thick, add a splash of pasta water.
  6. Season with salt and black pepper.
  7. Serve immediately, optionally topped with grilled chicken or extra cheese.

Tips

  • Use freshly grated Parmesan for a smoother sauce.
  • Don’t overheat after adding cheese or it can become grainy.
  • The original Italian version is actually lighter—no cream, just butter and cheese.
