Fettuccine Alfredo is a rich, creamy Italian pasta dish made with fettuccine noodles tossed in a buttery Parmesan cheese sauce. It’s simple but very filling.
Classic Fettuccine Alfredo Recipe
Ingredients (2 servings):
- 200 g fettuccine pasta
- 3 tbsp butter
- 1 cup heavy cream (or cooking cream)
- 1 cup freshly grated Parmesan cheese
- 2 cloves garlic (optional, minced)
- Salt and black pepper to taste
- Optional: chicken, mushrooms, or broccoli
Instructions:
- Cook pasta in salted boiling water until al dente. Save ½ cup of pasta water before draining.
- Make sauce: In a pan, melt butter over medium heat. Add garlic (if using) and sauté for 30 seconds.
- Add cream and simmer gently for 2–3 minutes.
- Lower the heat and stir in Parmesan cheese until smooth and creamy.
- Add cooked pasta and toss well. If too thick, add a splash of pasta water.
- Season with salt and black pepper.
- Serve immediately, optionally topped with grilled chicken or extra cheese.
Tips
- Use freshly grated Parmesan for a smoother sauce.
- Don’t overheat after adding cheese or it can become grainy.
- The original Italian version is actually lighter—no cream, just butter and cheese.
