These are big, bold, and messy in the best way: whole onions hollowed out and stuffed with bacon-cheddar cheeseburger filling, then baked (or grilled) until caramelized and juicy with a spicy “firecracker” kick.

Onion base

  • 4 large yellow onions (firm, similar size)
  • 1–2 tbsp oil or melted butter
  • Salt

Cheeseburger filling

  • 500g ground beef (80/20 preferred)

  • 1 cup cheddar cheese, shredded (plus extra for topping)

1. Prep the onions

2. Cook bacon

  • Fry bacon until crisp.

3. Make the filling

  • In a pan, sautĂ© chopped onion + garlic until soft.
  • Add ground beef and cook until browned.
  • Stir in salt, pepper, paprika, chili flakes.
  • Mix in bacon and let cool slightly.
  • Add cheddar cheese + egg + breadcrumbs (if using).

4. Stuff onions

  • Fill each onion tightly with the meat mixture.
  • Press gently so they hold shape.
  • Top with extra cheddar.

5. Bake

  • Preheat oven to 190°C (375°F).
  • Place onions in a baking dish (they should stand upright).
  • Cover loosely with foil.
  • Bake for 45–60 minutes, until onions are soft.
  • Remove foil for last 10 minutes to brown cheese.

6. Finish

  • Let rest 5–10 minutes before serving.
