🧾 Ingredients (4–6 servings)

  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2–3 carrots, diced
  • 2 celery stalks, diced
  • 3–4 cloves garlic, minced
  • 1 lb (450g) chicken breast or thighs
  • 6 cups chicken broth
  • Âľ cup orzo pasta

  • 2 cups spinach (optional)

👨‍🍳 Instructions

1. Sauté the base

  • Heat olive oil in a large pot over medium heat.
  • Add onion, carrots, and celery.
  • Cook 5–7 minutes until softened.
  • Add garlic and cook 30 seconds until fragrant.

2. Cook the chicken

  • Add chicken pieces to the pot.
  • Pour in chicken broth.
  • Add oregano, salt, and pepper.
  • Bring to a boil, then reduce to a simmer.
  • Cook 12–15 minutes until chicken is fully cooked.

3. Shred the chicken

  • Remove chicken and shred it with forks.
  • Return shredded chicken to the pot.

4. Add orzo

  • Stir in orzo pasta.
  • Simmer 8–10 minutes until tender (stir occasionally so it doesn’t stick).

5. Finish with lemon

  • Turn heat to low.
  • Stir in lemon juice and lemon zest.
  • Add spinach and let it wilt (if using).
  • Taste and adjust salt, pepper, and lemon.

🍽️ Serve

  • Garnish with fresh parsley.
  • Serve hot with crusty bread or pita on the side.
