Here’s a simple no-bake key lime pie that’s creamy, tangy, and doesn’t require an oven.
Ingredients
Crust
- 200 g digestive biscuits (or graham crackers), crushed
- 100 g melted butter
- 1–2 tbsp sugar (optional)
Filling
- 1 can (≈395 g) sweetened condensed milk
- ½ cup fresh key lime juice (or regular lime juice)
- 1–2 tsp lime zest
- 200 ml whipped cream (or 1 cup whipped topping)
Optional topping
- Extra whipped cream
- Lime slices or zest for garnish
Instructions
1. Make the crust
Mix crushed biscuits with melted butter (and sugar if using). Press firmly into a pie dish. Chill in the fridge for 20–30 minutes until set.
2. Prepare the filling
In a bowl, whisk together condensed milk, lime juice, and lime zest. The mixture will thicken slightly as the lime reacts with the milk.
3. Fold in cream
Gently fold in whipped cream until the filling becomes light and fluffy.
4. Assemble
Pour the filling into the chilled crust and smooth the top.
5. Chill
Refrigerate for at least 4–6 hours (overnight is best) until fully set.
6. Serve
Top with whipped cream and lime zest before serving.
