🍚🧀 Paneer Pulao

Paneer pulao is a fragrant Indian rice dish made with basmati rice, soft cubes of paneer (Indian cottage cheese), vegetables, and mild spices. It’s a quick, comforting meal that’s flavorful without being too spicy.


🧾 Ingredients:

  • 1 cup basmati rice (soaked 20–30 minutes)
  • 200g paneer (cut into cubes)
  • 2 tbsp oil or ghee
  • 1 small onion (sliced)
  • 1 tsp ginger-garlic paste
  • 1–2 green chilies (optional)
  • ½ cup mixed vegetables (peas, carrots, beans)
  • Whole spices: 1 bay leaf, 1 cinnamon stick, 2–3 cloves, 2 cardamoms
  • 2 cups water
  • Salt to taste
  • Fresh coriander or mint for garnish

👩‍🍳 Method:

1. Lightly fry paneer:

  • Heat a little oil and lightly sauté paneer cubes until golden.
  • Set aside (optional step, keeps paneer firm).

2. Prepare base:

  • Heat oil/ghee in a pot or pressure cooker.
  • Add whole spices and sauté until aromatic.
  • Add onions and cook until golden.

3. Add flavors:

  • Stir in ginger-garlic paste and green chilies.
  • Add vegetables and sauté for a few minutes.

4. Cook rice:

  • Add soaked rice and gently mix.
  • Pour in water and add salt.
  • Cook until rice is done (1 whistle in pressure cooker or simmer covered).

5. Finish:

  • Add paneer cubes and gently mix.
  • Garnish with coriander or mint.

🍽️ Serving:

  • Serve hot with raita 🥛
  • Pair with salad or pickle 🥗
