A layered root vegetable gratin is a rich, baked dish of thinly sliced root vegetables cooked in cream and topped with golden cheese. It’s creamy in the middle, crispy on top, and deeply comforting.

🧂 Ingredients

Vegetables (mix & match):

  • 2 medium potatoes (thinly sliced)
  • 2 carrots (thinly sliced)
  • 1 sweet potato (optional, for sweetness)
  • 1 small beetroot (optional, for color and earthiness)
  • 1 onion (thinly sliced, optional)

Cream sauce:

  • 2 cups heavy cream (or cooking cream)
  • 1 cup milk
  • 2–3 cloves garlic (minced)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp thyme or rosemary (dried or fresh)
  • Pinch of nutmeg (optional but classic)

Cheese topping:

  • 1½ cups grated cheese (cheddar, mozzarella, or Gruyère)
  • 2 tbsp butter (for dotting on top)

👨‍🍳 Instructions

1. Prep vegetables

  • Peel and slice all vegetables very thin (use a knife or slicer)
  • Keep slices even so they cook uniformly

2. Make cream mixture

  • In a bowl, mix cream, milk, garlic, salt, pepper, herbs, and nutmeg
  • Stir well so flavors combine

3. Layer the gratin

In a buttered baking dish:

  1. Layer sliced vegetables (alternate colors for a nice look)
  2. Pour a little cream mixture
  3. Repeat layers until everything is used

👉 Make sure cream covers at least ¾ of the vegetables


4. Add topping

  • Sprinkle cheese evenly on top
  • Dot with small pieces of butter for extra browning

5. Bake

  • Preheat oven to 180°C
  • Cover with foil and bake for 40 minutes
  • Remove foil and bake another 20–25 minutes until golden and bubbling

6. Rest before serving

  • Let it sit for 10–15 minutes so it sets
  • This helps it slice cleanly
