🍝 Crockpot Meatballs and Potatoes (Easy, Comforting Slow Cooker Meal)

- 500g minced beef (or beef + lamb)
- 1 egg
- ½ cup breadcrumbs

- ½ tsp black pepper
- 1 tsp Italian seasoning or oregano
- 2 tbsp parsley (optional)
For the crockpot:
- 500–700g baby potatoes (halved if large)
- 1 onion (sliced)
- 2 cups tomato sauce or passata
- 1 cup beef broth or water
- 2 tbsp tomato paste
- 1 tsp paprika
- 1 tsp chili flakes (optional)
- Salt & pepper to taste
- 2 tbsp olive oil
👨🍳 Instructions
1. Make meatballs
- Mix all meatball ingredients gently
- Roll into small balls (bite-sized works best)

2. Layer in crockpot
- Add potatoes at the bottom
- Add sliced onion
- Place meatballs on top
3. Add sauce
- Mix tomato sauce, broth, tomato paste, spices, and olive oil

- HIGH: 3–4 hours
Cook until potatoes are tender and meatballs are fully cooked.
