🌮🍲 Mexican Taco Lasagna (Layered, Cheesy & Spicy Bake)
A fun fusion dish that layers taco-seasoned beef, tortillas, beans, cheese, and salsa—like lasagna, but with Mexican flavors.

- 500g ground beef (minced beef)
- 1 onion (chopped)
- 2–3 garlic cloves (minced)
- 1 packet taco seasoning (or DIY below)
- 1 cup canned black beans or kidney beans
- 1 cup corn (boiled or canned)
- 2 cups salsa or chunky tomato sauce
- 6–8 small flour tortillas (or chapati/flatbread as substitute)
- 2 cups shredded cheese (cheddar or mozzarella mix)
- 2 tbsp oil

- Jalapeños
- Chopped coriander

- 1 tsp cumin
- 1 tsp paprika
- 1 tsp chili powder
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt & pepper
👨🍳 Instructions
1. Cook the beef
- Heat oil in a pan
- Sauté onion and garlic
- Add minced beef and cook until browned
- Stir in taco seasoning + a splash of water
- Add beans and corn, mix well
2. Prepare sauce layer
- Mix salsa or tomato sauce (can add chili sauce for extra heat)
3. Assemble layers
In a baking dish:
- Spread a thin layer of sauce
- Add tortillas (cut to fit if needed)
- Add beef mixture
- Sprinkle cheese
- Repeat layers
Finish with tortillas + sauce + lots of cheese on top
4. Bake
- Bake at 180°C (350°F) for 20–25 minutes
- Cheese should be melted and golden
- Let rest 10 minutes before slicing
