Southern Fried Chicken is all about crispy, craggy coating + juicy, well-seasoned meat. The secret is in the marinade and the double-layer seasoning.

🧂 Ingredients

Chicken:

  • 1 kg chicken pieces (legs, thighs, wings recommended)

Buttermilk marinade:

  • 2 cups milk (or yogurt thinned with water if buttermilk unavailable)
  • 1 tbsp vinegar or lemon juice
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder

Coating:

  • 2 cups all-purpose flour
  • 1/2 cup cornflour (for extra crispiness)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp chili powder (optional)
  • 1 tsp garlic powder
  • 1/2 tsp baking powder (helps crunch)

For frying:

  • Oil (enough for deep frying)

👨‍🍳 Instructions

1. Marinate the chicken

  • Mix milk + vinegar/lemon juice → let sit 5 minutes (quick buttermilk)
  • Add salt, pepper, paprika, garlic powder
  • Submerge chicken completely
  • Cover and refrigerate at least 4 hours (overnight = best)

2. Prepare coating

  • In a bowl, mix flour, cornflour, spices, and baking powder
  • Optional: add a few spoonfuls of marinade into flour for extra crunchy bits

3. Coat the chicken

  • Take chicken from marinade (don’t wipe it dry)
  • Dredge in flour mixture firmly
  • Press coating into chicken for craggy texture
  • Let rest 10 minutes (helps coating stick)

4. Frying

  • Heat oil to medium (around 170–180°C)
  • Fry chicken in batches (don’t overcrowd)
  • Cook:
    • Small pieces: 10–12 min
    • Large pieces: 14–18 min
  • Turn occasionally until golden brown and crispy

5. Rest & serve

  • Place on wire rack (not paper towels, keeps it crisp)
  • Let rest 5 minutes before serving

  • The overnight marinade = juiciest chicken
  • Add a little hot sauce in marinade for extra flavor
  • Double-dip (marinade → flour → back to marinade → flour) for ultra-crunch
